Michelin-Starred Chefs Arrive in Nha Trang from Spain for Debut of Hispania

Spain has been home to the Michelin Guide for over 100 years and several Spanish chefs representing some of its starred restaurants are bringing their talents to Nha Trang this January for the Vietnam debut of Hispania, a premium Spanish restaurant that pays homage to Spanish culture via innovative dishes and a well-stocked wine cellar.

Marcos Morán is the visionary chef behind Hispania, the signature restaurant for Gran Meliá Nha Trang. The fifth generation in a lineage of chefs, Morán currently heads Casa Gerado, the one-star Michelin restaurant his family has helmed since 1883 as well as Hispania’s two other restaurants, including its Michelin-starred Brussels location.

To celebrate the opening of Hispania as well as emphasize Gran Meliá Nha Trang as a destination for luxury gastronomy, on January 13th, Una Cita at Hispania will see Morán prepare an exclusive multi-course meal with the help of other acclaimed chefs such as his long-serving collaborator Adrián Mancheño, who has worked in some of Spain’s most prestigious kitchens including the three-starred Celler de Can Roca, which was crowned the World’s Best Restaurant in 2013 and 2015. Spanish chefs Pepe Solla and Begoña Rodrigo, both from Michelin-starred restaurants, will also be on hand for Una Cita at Hispana.

“Hispania, and the talented chefs joining us in January, will offer an immersive escapade through the food and wine of Spain's beautiful regions,” explained Ernesto Osuna, General Manager of Gran Meliá Nha Trang. “The dishes are inspired by Spanish culture, culinary history, and the different seas and oceans that surround Spain: Mediterranean, Cantabria and Atlantic, as well as each chef’s hometown.”

The event will reflect Hispania’s regular menu which includes signature dishes from their London and Brussels locations that balance new Spanish cultural trends with hundreds of years old Spanish wine-making traditions. Morán’s dedication to fresh seasonal ingredients also means that he will make use of the finest Vietnamese seafood.

Hispania’s ethos naturally coincides with Gran Meliá Nha Trang’s overall luxury dining aims. The expansive resort is also home to Shibui, an elegant Japanese restaurant and Natura which showcases Mediterranean dishes. Osuna notes: “With Hispania and the hotel’s other upscale dining outlets, such as Shibui, we expect to become a destination of reference for haute cuisine in Nha Trang, set to raise the bar on gastronomy in the city.”

The Una Cita at Hispania dinner with premium wine pairing is VND 5++ million per person; dinner without wine pairing is VND 3++ million per person. The weekend package per couple is VND25 million (USD1,035) including a dinner by Michelin-starred chefs with wine pairing. The special offer is also inclusive of a two-night villa stay with free upgrade, daily breakfast, and round-trip airport transfers.
